"Hobakjuk"(Korean Pumpkin Porridge)


'Hobakjuk' is a typical Korean porridge;
it stimulates the appetite with its sweetness and tender color.
 Hobakjuk is low calories and a good diet food.  


Recipe


Rinse the pumpkin. 

Remove the pumpkin's seeds and strings.
 If you want, you can toast the seeds and eat them too.^^


Peel the pumpkin rind.
To make it a little bit easier, you can microwave these for a minute
 or two before peel.



Once peeled, dice them up and put it in a big pot.
Fill up the pot with water, to cover all the pumpkin.


Then place the pot on the stove and start cooking it.
Try to mash the pumpkin when it become tender.

Add in a cup of each rice and glutinous rice (or rice/glutinous rice flour).
 Also, add in water to reach your preferable thickness.

Boil the gravy until fragance and smooth.
 You could use an immersion blender to blend a smoother gravy.



Then add the red beans (½ cup) and mix it all together.


When the soup has thickened,it is ready to serve.
