Yaksik (약식) Sweet rice with nuts and jujubes



Today, I would like to introduce 
one of Korean tradinational foods called Yak sik.
It may also be called Yak bap(medicinal rice)

Yaksik is a traditional korean snack or dessert,
made with steamed glutinous rice,honey,nuts and jujubes(Korean dates).

 Many Koreans eat Yaksik as a healthy alternative to cookies and chips. 
It's often served at weddings and parties. And it also 
can bean excellent alternative to granola bars.

Now,then Shall we get on with it?

Ingredients


 Sweet steamed rice seasoning sauce
2 1/2 cups - Sweet rice(Glutinous Rice), 
1/3 cups - Brown Sugar, 2 cup - Water(for the sauce)
3 tbsp - Soy Sauce , 3 tbsp - Sesame Oil
3 tbsp - Honey , 2 tbsp - Cinamon Powder, 1 tsp - Salt


Peeled Chestnuts (or nuts or dried fruit of your choice)
Jujube or Red Date (Dried) 
Pine nuts (or nuts or dried fruit of your choice)
Walnuts (or nuts or dried fruit of your choice)
Peanuts(or nuts or dried fruit of your choice)

add it according to your personal prefernce in all nuts 
(I forgot to bring rasins.Please don't forget to put rasins
 because they make it taste better with them.)
Prepare jujube
A. For dates, cut them into long thin slices and put them aside
B.1-Wash 15 jujubes thoroughly and remove water with paper towel.
 Remove the seeds from jujubes by peeling the 
flesh while turning Keep the seeds.
2.Roll the flesh of jujubes.
3.Slice jujube thinly Cut nuts

Directions

1.Wash the glutinous rice and soak in water for about 3 hours,

 drain water through a strainer for 10 min. 

2.Pour 2 cups of water in a pot. (Jujube water)Add the jujube seeds
 and boil for on medium heat 10 minutes. Then, cool it down.


3.Mix jujube water, brown sugar , soy sauce, sesame oil,
 cinnamon powder and salt. Make sure all the ingredients are well dissolved in the
 jujube water (You could boil it for 2-3 minutes).

4.Put soaked glutinous rice in a rice cooker 
and place chestnuts, jujubes, pine nuts, walnuts on top. 
5.Pour the sauce over the rice and cook on the white rice mode (if there is an option).
 Don’t open the rice cooker for at least 5 min even after the 
cooking completion light has come on.


6.With a rice spatula, flip through the rice gently.

7.Decorate each piece with the pine nuts and jujubes that were saved
 from the earlier step. Serve and enjoy.:)
